There are two more Fate shows that you are absolutely required to watch once you finish Fate/Zero, they are directly related: next up is "Fate/Stay Night Unlimited Blade Works" and then finally "Fate/Stay Night Heaven's Feel." As you said, there are a lot of "Fate" shows, but most of them are spin-offs that you can watch if you're interested, but not required. Just to make it clear, yes, the priest is Kirei's actual dad.

There is a short video series ’Einzbern consultation room’ that was included in the Blue-ray set of Fate/Zero which explains some extra details.
