I'm not sure if the Kennishes biggest issue with Emmett driving Daphne was the motorcycle or the fact that he's Deaf, and I almost wish they had had Emmett driving her just in a car so that the show could've addressed the deaf people and driving misconception a bit more clearly. It is legal in all 50 states for deaf people to drive because studies have shown they are no more at risk for accidents than hearing people. It is hard for us to imagine not relying on hearing when driving for things like sirens and horns because that is part of our sensory experience, but the sense that is most essential for driving is sight, and deaf people compensate for not hearing by being more visually aware. This means that deaf people will notice the visual signals of flashing lights from an emergency vehicle or the gestures from a person honking more than a hearing person would. You asked about music too and it's not a simple thing to answer, but deaf people definitely can and do enjoy listening to music, it's just, as you said, different from how we experience it as hearing people. All deaf people have different levels of trace hearing which means they will be able to detect different amounts of the sounds in music, and they can feel the vibration from the base when turned up to high volumes. There are some truly awesome deaf dancers out there! One of the reasons closed captioning availability is so important is because this is another way deaf people enjoy music. They may not be able to hear the words being sung but if they can see the lyrics they can match it up to the rhythm of the beat. Just a different experience than what we have but still a very meaningful one for many deaf and hard-of-hearing people. I do think there will be more discussion to come of the deaf experience with music on the show.
