The manga can easily imply more revealing scenes because it only needs convenient scenery/debris to be covering during the drawing. In the anime, time passes, so anything that's acting like a sensor must be rearrange that it is there the entire time the character is on screen. As far as I understand it, when Gray said that Loke left Fairy Tail, he didn't mean "left" as in went away but "left" as in quit. It only makes sense that he'd officially quit as 1. like you said it would take forever to realise he was missing and 2. he was getting all his affairs in order like with breaking up with all his girlfriends. I the only foreshadowing for this that I know of is the anime-only body swap episode where Natsu doesn't know how to use Loke's magic and says his body feels weird. The Manga states that he uses ring magic, so instead of being innately magical he uses an object.
