In regard to when you asked why dooku doesnt just take ventress back - Dooku never wanted to get rid of ventress, palpatine saw how powerful she was getting and commanded dooku kill her, dooku hesitated but ultimately had to do so. Although we all know palpatine is leagues more powerful than any being in star wars (aside from anakins raw potential), and that ventress wouldnt have become a threat even in addition to dooku, betrayal and deceit is the way of the sith, and by commanding dooku to kill his apprentice, hes basically reminding dooku that palpatine IS the master and regularly wants shows of loyalty and unquestioning obedience. Though there is some fear there on palpatines part, especially since his own master was so incredibly powerful yet was killed easily by palpatine when he was sleeping.
