the "500 years in the future" thing is really not something new...for most of the times vegapunk has been referenced, i believe they used that phrase...i think koby said it to luffy back in post-enies lobby or when franky was sent to his home island during the timeskip EDIT: yeah they used this phrase to indicate how advanced he is

about vegapunk...ceaser, smoker, and fujitora all referred to vegapunk as "old guy" or "old man", (source: punk hazard and reverie arcs) so something's sus...also she has 002 written on her cloth also i saw theories how she looks like sanji's mom...perhaps maybe related to her or something...cuz sanji's father, judge, at one point worked with vegapunk (source: wci arc)

I recommend you watch those because they can give you context on stuff you may have forgotten. Also it can prevent some people in your comments from giving you unintentional spoilers when they are trying to remind you of information you may have forgotten.
