Woohoo! Finally got to the Joichiro episode. I agree! The episodes where Joichiro appears are sooooo good. Gin and Erina's grandfather are supporting characters with minor screentime, but I love that the former Director understood that Joichiro needed to step away from cooking in order to heal... and Gin was a friend that was heartbroken to see what happened to Joichiro. But yeah, if you remember, his advice to Hayama after the Autumn Selections was because of what happened to Joichiro. But yeah, with the Joichiro backstory, Azami's motivations make a lot more sense now. Although he's The Bad Guy, he saw his idol ruined by the endless wasteland of the culinary world. He wants to standardize gourmet dining so that no other chef has to continuously top what they'd done before. Of course... the only problem is that it's at the expense of the freedom that comes with cooking.

WFO in the anime is like the organization we have now. To get a Michelin star. The "book" in the anime is like the book " Michelin Guide" . They followed exactly like the real thing :) The famous gordan ramsy of Britain is ranked 7 of having 7 Michelin star from all over the world. It could of change now since its inspected every year. He was awarded a total of 16- 17 Michelin star before but a lot has been removed. The one with the most star is in his home country. He has been in the culinary business for over 2 decades and his Michelin star comes and goes. Not easy to achieve one or even maintain the rating. They get randomly inspected by the organization every year by someone new so no restaurant will know or prepare ahead of time. The star can be given and also be taken away next time. Same goes for the guide of a hotel ranking from 1-5 stars or other countries over 5 star. Can be given and can be taken away
