Ingredients:
8 oz (227 g) package chopped frozen spinach
¼ cup diced onion
15 oz (425 g) ricotta cheese
1 large egg
3 cups shredded mozzarella cheese, divided
½ cup shredded parmesan cheese, divided
1 tsp. salt
2 tsp. dried parsley
2 x 24 oz (680 g) marinara sauce
8 oz (227 g) dried manicotti noodles
Directions:
1. Preheat oven to 350 F (177 C). Spray 9 x 13 pan with nonstick cooking spray.
2. Heat spinach according to package directions. Drain, and set aside to cool.
3. In a large bowl, combine onion, ricotta, egg, 2 cups mozzarella, ¼ cup parmesan, salt, and parsley. Stir to combine. Add spinach to cheese mixture and stir again until even.
4. Pour marinara into prepared 9 x 13 pan; approximately 1-2 cups, or until bottom of pan is fully covered.
5. Using clean fingers, a spoon, or a piping bag, fill uncooked manicotti noodles with spinach/cheese mixture until noodle is filled. Place manicotti into pan, repeating until every manicotti has been filled and the pan is full.
6. Pour the remaining marinara sauce over the manicotti, spreading to ensure even coverage. Sprinkle with remaining cheeses.
7. Cover pan with aluminum foil. Place is preheated oven and cook for 55 minutes.
8. Remove tin foil from pan. Return to oven and cook for an additional 15 minutes.
9. Remove from oven. Cool 5-10 minutes before serving.
