it's the difference between eiyuu and yuusha that the anime doesn't explain. Shizu was referred to as an eiyuu last episode, which unfortunately can be translated as hero. Yuusha is often translated as hero as well and it's sometimes interchangeable, just not in slime. At the end of this episode, they did use Champion though

To clarify/confirm, Shizu lived during WWII, what we saw was likely the Kyushu raid, so yea, she is already a granny at this point unfortunately as she remained human

i know saying this now is kind of pointless but later in the anime it's actually stated why monsters don't name eachother

Shizu was not a hero she was a champion it is 1 step below hero. Another thing the anime leaves out like how monsters are ranked.
