Speaking as a kid who grew up in US public schools "Club Day" was not really a thing. As you say, we mostly found out about the various clubs through either bulletin boards or them being mentioned in the morning announcements, at least where I grew up. What we DID have was a principal at the height of Poke-mania who cracked down VERY hard on people bringing the cards to school. Not so much for any anti-demonic thing that I recall. I don't know that they ever said why, but I gather the zero tolerance for Pokemon cards was due to a fear that kids wouldn't focus on learning math with them around. I remember being called into the principal's office one time and seeing that she had sorted all the cards she had confiscated into one of the things normally used to hold lunch cards for the kids who got school lunches, so all the cards were neatly displayed. I also remember being jealous that she effectively "had" a holographic Pigeot, a card I never personally got. To clarify, the principal wasn't keeping these cards forever. Rule was that you could pick it up at the office at the end of the school day. Kids were just lazy and not picking up their cards again for some reason. Come to think of it, that was ALSO something they said on the morning announcements: Sarcastic reference to how big the principal's collection was getting, and reminding us kids they could get their cards back.

Worth noting that most of the storyboard team of this show also worked on Big City Greens, a currently-airing Disney TV Animation show like The Ghost and Molly McGee. And one of them is Kiana Khansmith, who managed to sneak in Jessie and James into Big City Greens after hearing that Gramma Green and Meowth share a VA in their respective shows Japanese dubs. She also has a blog about a Pokemon AU where Jessie is dating Ash's mom.
